The Greatest Vegetable Korma for Dollars a day!!! In less than 30 Minuets !!! Enjoy !!!
This is my easy curry recipe it serves large family's for dollars and it is by far the most sustainable way to eat.
1\2 Cup Lentils 4 Grams Protein
1\2 Cup of Green Split Peas 22 Grams Protein
1\2 Cup of Chickpeas has 16 Grams of Protein.
After you gather your ingredients, chop up your veggies and your good to start cooking!!
2 Carrots 2 Celery Sticks
1 Red Onion
2 Tea Spoons of Whole Cumin Seeds
2 Tea Spoons of Mustard Seed
2 Tea spoons of Garam Masala
2 Tea Spoons of Hot Madras Curry Powder
2 Tea spoons of Shreaded or Chopped Ginger
4 potatoes
1 Vegetable of your choice. Cut to Cubes
This is the MOST IMPORTANT STEP DO IT FIRST. The Lentils, Peas, and Chickpeas must be soaked overnight, Just throw them in a container and fill with water!! It takes seconds, and the water does all the work.
Add the Potatoes, Carrot, Vegetable of your choice, and Celery to Boil.
Add the Chickpeas, Lentils, and Split Green Peas. You can boil them all in one pot if you have one large enough. Or you can separate into two pots like I did for more Manageability.
Also cook 2 cups Basmati Rice in a pot as Well
After you let them boil for about 20 Mins. Its time to get the spice started!!
The NUMBER 1 Rule for cooking curry is ALWAYS start with the spice.
Heat your oil, I kept mine on 4 out of 10 heat, or Medium low, To cook it slow and not burn.
After the oil is hot, Add the Whole Cumin Seed and Mustard Seeds.
After the seeds have a minuet on the heat and are browned. Add 1 Tea Spoon Hot Madras Curry Powder. You can use a mild curry if you don't like spice!!
After the curry is heated with the Whole seeds, add the Onion and Ginger!
I keep it on a low heat and let it all soak up that good good flavor. This first part of cooking the spice with onion is the most crucial not to burn. Give it just a few minuets and it will be nice and browned and the smell is totally amazing!!
Add one can of tomato Paste
The potatoes and beans should have been cooking about 25-30 minuets at this point. Drain all of them and add to large pot with the spice and onion!! Then add Coconut Cream!!
